Easy Gluten Free Pizza

The first thing I tried from my prize from Udi’s was the pizza crust.   It truly is the best ever! Nice and crunchy just the way I like it!!! It does not taste like your typical gluten free pizza crust. I really think you could serve this to gluten eating people and they wouldn’t know!!!!

I gathered up all the needed ingredients. Udi’s pizza crust, my very seasoned stone to bake it on, some cheese and of course some type of spaghetti sauce. You can cook it on any pizza pan that you have, I know it will taste great no matter what you use!

Last night we had spaghetti with meat sauce. The sauce I actually used for this pizza was the left over spaghetti sauce (from a jar) with hamburger that I browned and added to it. And let me tell you that it was scrumptious!!! You can use a meat sauce or even just a plain spaghetti sauce.  We generously spread the sauce on the crust and followed with some parmesan cheese. (you know the kind that comes in a can!)

We topped that with some shredded Colby Jack cheese. You can buy it pre-shredded or just shred your own. (I read that chemicals and anti caking agents are added to the already shredded stuff so I shred my own, it is cheaper and takes like 2 minutes!) Add a couple sprinkles of Italian Seasoning and bake at 375 degrees for 15 minutes.  You will love the results!!!

Yummy and Easy Gluten Free Pumpkin Pie

Oh I made really yummy and easy Gluten Free Pumpkin Pie! This is one of the foods  I really miss and I think I will be making this many times throughout the year not just for the holidays!!!

I love recipes that have 4 ingredients and are yummy!

I got the pie crust at Whole Foods and I have to say that if I did not let my family know it was gluten free they would not have known! Of Course, once they see me eating it, it is kind of a given!   Anyways,  I love that the Libby’s pumpkin pie mix and the Carnation evaporated milk say Gluten Free right on the labels!

I used the recipe that is right on the side of the Libby’s Pumpkin Pie Mix can and it was so good I was very surprised at how tasty it was!!!

You will need:

  • 1 – 30 oz. Can of Libby’s Easy Pumpkin Pie Mix
  • I – 5 oz. can of Evaporated Milk
  • 2 – eggs
  • 1 – uncooked Gluten Free Pie Crust

Mix the ingredients and pour into the unbaked pie crust. BAKE in preheated 425°F. oven for 15 minutes. Reduce temperature to 350° F.; bake 50 to 60 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

Mouth Watering Gluten Free Cinnamon Rolls

Yesterday I told you about the wonderful bagels and today I want to let you know that I also tried Udi’s cinnamon rolls and they are equally as wonderful.  They are not going to replace my favorite Cin-a-bun but I do believe they satisfy the craving!!! Again well worth the money and I fond them in Whole foods in the gluten free bread section. Get some today and leave me a comment with your review!!

Here are the ingredients:

Cinnamon Rolls

Satisfy your sweet tooth with our melt-in-your mouth cinnamon rolls. Loaded with cinnamon and spices and topped with a sugary glaze, our rolls will please everyone at your breakfast table. Pop in the oven for a warm and comforting treat. Four to a pack.

INGREDIENTS: FILTERED WATER, TAPIOCA STARCH, BROWN RICE FLOUR, POTATO STARCH, CANOLA OIL OR SUNFLOWER OIL, EGG WHITES, EVAPORATED CANE JUICE, TAPIOCA MALTODEXTRIN, TAPIOCA SYRUP OR BROWN RICE SYRUP, YEAST, XANTHAN GUM, SALT, MOLD INHIBITOR (CULTURED DEXTROSE, ASCORBIC ACID), BAKING POWDER (SODIUM BICARBONATE, CORNSTARCH, CALCIUM SULFATE, MONOCALCIUM PHOSPHATE), ENZYMES, ASCORBIC ACID (CONTAINS CELLULOSE AND CORNSTARCH). FILLING: EVAPORATED CANE JUICE, CINNAMON, CANOLA OR SUNFLOWER OIL. CONTAINS: EGGS

Gluten Free Peanut Butter Cookies to Die For!!!

Gluten Free eating does not have to be boring and bland!! I swore I had died and gone to Heaven after I ate one of these gluten free cookies. My girlfriend, Theresa Logan, has made me the best cookies EVER and you will love them too!!!!  I don’t even like peanut butter all that much, so you know these have got to be amazing!!! My family loved these and I am the only one who is gluten free, so try this recipe and no one would ever guess there is no flour.

These 4 ingredients make for a yummy gluten free peanut butter cookie!

These four ingredients do not look like the makings of a yummy to die for no flour peanut butter cookie but you are going to be so amazed!!!  Preheat the oven to 325 degrees and gather the items you need.

You need:

1 Cup Peanut Butter

1 Cup Sugar

1 teaspoon Vanilla

1 Egg

And that is all, my friends!!!

Place all the above ingredients in a bowl.

Mix it all up good!

It takes only a minute or two to mix it all up.

Form it  into balls and place each ball on a cookie sheet, separate from the others.  Use a fork to squish the cookie down and flatten it.

I used a baking stone but any cookie sheet will do just fine!

Turn the fork and squish in the opposite direction so you have formed a grid mark on the top of the cookie.

Beautiful!

Bake at 325 degrees for 15 minutes and that is it!!!! Let them cool for a bit on the cookie sheet before you remove them or they will fall apart.  Pour a big glass of milk and be ready to enjoy!!! Living Gluten Free in A Gluten Full World ~ My Story

When I first discovered I could not eat gluten my world was rocked to say the least!!! This was at least 7 years ago and there were not many gluten free items available as there are now. The whole Gluten Free movement was just getting underway at that time.  For the first year I found it very difficult to even go into a grocery store. I would have huge pity parties right there in the aisle, as I saw all the items I could not eat!!!! I really thought my life was over.  It is hard to be gluten free and have to see all the things you can not eat is certainly like a kick in the gut. Thankfully labeling is getting much better and they now list most of the ingredients and some have listed gluten free on it which is an incredible blessing and you no longer have to read every ingredient on every item you want to purchase.

I can remember feeling so drained after shopping because I literally had to read each and every label. Thankfully I am blessed with an incredible husband who stepped up and took it upon himself to do most of the grocery shopping. Good thing because I think I would have starved or lived on bun-less burgers for the rest of my life!!!

One very huge tip I would like to pass along to you is to always and I mean always have a food stash. I remember being in Wal-mart and getting so shaky that I needed to eat something I could not find a single thing to eat there and that was really not the time to start reading labels and going on a scavenger hunt.

So my suggestion is to always have a small stash of food available to you. Nuts are great for this because they have protein. Pretzels (there are some great sources for these that I will share later) granola bars (makes sure they are gluten free!) or any other time that you can have on hand for an emergency situation.  My dream and desire for this website is to help others maintain a normal life while living gluten free.
